Description

A quick and flavorful Taco Rice recipe combining seasoned ground beef with tender rice, salsa, and melted cheddar cheese—perfect for a weekday dinner in just 25 minutes.

Ingredients

Scale

Meat and Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning

Liquids

  • 2 cups water

Grains

  • 2 cups Minute Rice, uncooked

Toppings

  • 1 cup salsa
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the Ground Beef: In a large skillet over medium-high heat, add the ground beef. Cook while crumbling it with a spatula until it is fully browned and no longer pink. Drain off any excess grease from the skillet to keep the dish from becoming too oily.
  2. Add Taco Seasoning and Water: Sprinkle the taco seasoning over the browned beef, then pour in 2 cups of water. Stir everything together thoroughly, then increase heat slightly to bring the mixture to a boil.
  3. Cook the Rice: Once boiling, reduce the heat to low. Stir in the uncooked Minute Rice evenly into the meat mixture. Cover the skillet with a lid and allow to cook for about 5 minutes, or until the rice is tender and has absorbed most of the liquid.
  4. Mix in Salsa and Cheese: Remove the lid, then gently stir in the salsa and shredded cheddar cheese until thoroughly combined and the cheese begins to melt. Serve warm for a delicious and hearty meal.

Notes

  • Draining the excess grease after browning the beef helps control fat content and prevents a greasy texture.
  • Minute Rice cooks quickly due to pre-cooking; do not overcook to avoid mushiness.
  • Feel free to customize by adding black beans, corn, or a dollop of sour cream for variety.
  • Using low-sodium taco seasoning can help control sodium intake.
