Description

A quick and flavorful Spam Fried Rice recipe that brings together crispy Spam, scrambled eggs, and fresh leafy greens in a savory soy sauce base. Perfect for using up leftover rice and making a satisfying meal in just 25 minutes.

Ingredients

Scale

Main Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 can Spam (cut into small cubes)
  • 3 large eggs (beaten)
  • 1 cup leafy greens (such as lettuce, cabbage, or bok choy)
  • 2 tablespoons soy sauce (or to taste)
  • 1 tablespoon oyster sauce (optional)
  • 2 cloves garlic (minced)
  • 1 tablespoon vegetable oil (for frying)
  • Salt and pepper (to taste)
  • Green onions (optional, for garnish)

Instructions

  1. Prepare the Rice and Spam: Spread freshly cooked rice on a tray to cool. Heat a skillet or wok over medium-high heat, add oil, and fry Spam cubes until crispy, about 3-5 minutes. Remove from skillet and set aside.
  2. Scramble the Eggs: In the same skillet, pour in beaten eggs and scramble until just cooked. Remove and set aside with the Spam.
  3. Stir-Fry the Garlic and Rice: Add more oil if needed, then sauté minced garlic for 30 seconds until fragrant. Add rice and stir-fry for 2-3 minutes, breaking up any clumps to ensure even heating.
  4. Add Seasonings and Greens: Drizzle soy sauce and optional oyster sauce over the rice and stir well to combine. Add leafy greens and stir-fry until they begin to wilt but remain vibrant.
  5. Combine Everything: Return crispy Spam and scrambled eggs to the skillet. Gently toss everything together and heat for another minute to blend flavors and warm through.
  6. Serve: Transfer the fried rice to a serving bowl. Garnish with chopped green onions or additional soy sauce if desired. Serve hot and enjoy!

Notes

  • For best texture, use day-old rice as it is less sticky and fries better.
  • Adjust soy sauce to taste for preferred saltiness.
  • Leafy greens can be substituted with any preferred vegetables or omitted.
  • Oyster sauce is optional but adds a richer umami flavor.
  • Leftover rice works great for this recipe and helps reduce food waste.
