Description

A delicious and easy Roasted Mushrooms recipe featuring cremini mushrooms caramelized to perfection with a savory garlic butter glaze, enhanced by soy sauce, balsamic vinegar, and fresh herbs. Perfect as a side dish or a flavorful addition to any meal.

Ingredients

Scale

Mushroom Preparation

  • 2 pounds (908 g) cremini mushrooms, or baby bella
  • 2 tablespoons (30 ml) extra-virgin olive oil
  • 1 teaspoon (5 g) kosher salt, or sea salt
  • ½ teaspoon black pepper, plus more for garnish

Glaze

  • 2 tablespoons (30 g) melted butter
  • 2 teaspoons (10 ml) soy sauce
  • 2 teaspoons (10 ml) balsamic vinegar
  • 2 teaspoons minced garlic
  • 2 teaspoons chopped thyme, or 1 teaspoon dried
  • 1 teaspoon parsley

Instructions

  1. Preheat Oven and Prepare Rack: Set the oven rack to the lowest position and preheat your oven to 450ºF (232ºC). Positioning the rack low ensures the mushrooms receive direct heat, which helps moisture evaporate quickly and promotes better caramelization.
  2. Clean and Cut Mushrooms: Rinse and dry the mushrooms thoroughly. Trim the stems as needed. Leave small mushrooms whole (1 to 1½-inch), halve medium-sized mushrooms (1½ to 2-inches), and quarter larger mushrooms (over 2-inches). This uniform sizing allows even cooking.
  3. Season Mushrooms: In a large bowl, toss the mushrooms with olive oil, kosher salt, and black pepper until evenly coated. Spread them out evenly in a single layer on a large rimmed baking sheet to avoid steaming and ensure proper browning.
  4. Initial Roast: Roast the mushrooms for 25 to 30 minutes until most of their liquid has evaporated. Stir carefully with a spatula to turn them over. This step evaporates excess mushroom moisture and deepens their flavor and texture.
  5. Prepare and Add Glaze: In a small bowl, mix together melted butter, soy sauce, balsamic vinegar, minced garlic, and thyme. Pour this mixture over the roasted mushrooms. Stir to combine and continue roasting for another 3 to 5 minutes until the garlic is fragrant and the glaze thickens.
  6. Garnish and Serve: Transfer the glazed mushrooms to a serving platter. Garnish with fresh parsley and additional black pepper to add freshness, flavor, and a pop of color before serving.

Notes

  • Use cremini or baby bella mushrooms for best flavor and texture.
  • Make sure mushrooms are spread in a single layer to avoid steaming and encourage caramelization.
  • Adjust roasting times slightly depending on mushroom size and oven performance.
  • Fresh herbs like thyme and parsley can be substituted with dried herbs if unavailable.
  • This dish pairs beautifully with steaks, chicken, or as a topping for toasted bread or pasta.
