Description

Libby’s Pumpkin Muffins are moist, flavorful, and perfect for fall baking. Made with pure pumpkin and warm spices like cinnamon, nutmeg, and cloves, these muffins are a delicious breakfast or snack option. They are easy to prepare, with a tender crumb and a delightful blend of spices that capture the essence of autumn.

Ingredients

Scale

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

Wet Ingredients

  • 2 large eggs
  • 1 (15 oz) can Libby’s 100% Pure Pumpkin
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and prepare muffin pan: Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or grease the cups thoroughly to prevent sticking.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger until well combined.
  3. Combine wet ingredients: In a separate bowl, beat the eggs lightly. Then stir in the Libby’s pumpkin, vegetable oil, milk, and vanilla extract until the mixture is smooth and even.
  4. Combine wet and dry: Add the wet ingredients to the bowl with dry ingredients. Stir gently and just until combined to avoid overmixing, which could make the muffins tough.
  5. Fill muffin cups: Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full to allow room for rising.
  6. Bake: Place in the oven and bake for 20 to 24 minutes. Check doneness by inserting a toothpick into the center of a muffin; it should come out clean when done.
  7. Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. This helps the muffins set properly and prevents sogginess.

Notes

  • These muffins freeze well for up to 3 months; thaw before serving.
  • For added texture, fold in 1/2 cup of chopped nuts or chocolate chips into the batter.
  • Sprinkle coarse sugar on top of muffins before baking for a sweet, crunchy topping.
