Description

Easy Spinach Queso is a creamy, cheesy dip that combines Velveeta cheese, Rotel tomatoes, and spinach artichoke dip to create a flavorful appetizer perfect for parties or game days. Ready in just 15 minutes, this microwaved queso is smooth, cheesy, and packed with spinach goodness, making it a delicious crowd-pleaser served with tortilla chips.

Ingredients

Scale

Ingredients

  • 1 lb Velveeta cheese, cubed
  • 1 (10-oz) can Rotel tomatoes, undrained
  • 2 (8-oz) packages TGI Friday’s Frozen Spinach Artichoke Dip
  • â…“ cup milk (optional, to thin dip)

Instructions

  1. Partially cook spinach artichoke dip: Peel back a corner of one package of the frozen spinach artichoke dip and microwave on HIGH for 2 minutes. Allow it to set aside while preparing other ingredients.
  2. Combine Velveeta and Rotel: In a large microwave-safe dish, combine the cubed Velveeta cheese with the undrained can of Rotel tomatoes. Microwave on HIGH for 5 minutes or until the cheese begins to melt.
  3. Mix in spinach artichoke dip: Remove the dish from microwave and stir in both packages of the partially cooked spinach artichoke dip. Return to microwave and cook for an additional 3 to 5 minutes, or until the mixture is fully melted and heated through. Stir thoroughly to blend all ingredients.
  4. Adjust consistency: If the dip is too thick, stir in up to â…“ cup of milk to thin it out to desired consistency.
  5. Serve: Transfer the spinach queso to a serving bowl and serve warm with tortilla chips for dipping.

Notes

  • Use a microwave-safe dish large enough to hold all ingredients comfortably without spilling.
  • Adjust milk quantity based on how thick or thin you prefer your dip.
  • This dip can be kept warm in a slow cooker if needed for serving at a party.
  • For extra flavor, add a pinch of chili powder or cumin to the mixture before final heating.
  • Store any leftovers in an airtight container in the refrigerator and reheat gently in the microwave.
