- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

- 150 grams (3/4 cup) caster sugar or granulated sugar
- 50 grams (1/4 cup) caster sugar or granulated sugar (for topping)
- 1 teaspoon ground cinnamon

- 1 cup (approximately 1 large) red apple, peeled and roughly chopped
Wet Ingredients
- 2 large eggs
- 1 teaspoon vanilla extract
- 120 ml (1/2 cup) vegetable oil or flavorless oil
- 120 ml (1/2 cup) Greek yogurt
- 1 tablespoon butter, melted (for topping)
- 30 grams (1/4 cup) icing sugar or powdered sugar, sifted (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat and Prepare Pan: Preheat the oven to 180°C (350°F) for a standard oven or 160°C (320°F) for fan-forced ovens. Grease and line an 8-inch round cake pan with baking or parchment paper to prevent sticking.
- Combine Dry Ingredients: In a large mixing bowl, sift together or add the plain flour, baking powder, baking soda, salt, and 150 grams sugar. Stir in the chopped, peeled red apple so it’s evenly distributed throughout the flour mixture.
- Mix Wet Ingredients: In a separate bowl, whisk the eggs until lightly frothy. Then add the vanilla extract, vegetable oil, and Greek yogurt, mixing until smooth and well combined.
- Combine and Mix Batter: Pour the wet ingredients into the dry ingredients bowl. Gently fold them together until just combined, taking care not to overmix to keep the cake light and tender. Pour the batter into the prepared cake pan and smooth the top.
- Prepare Cinnamon Topping: In a small bowl, mix the remaining 50 grams sugar, ground cinnamon, and melted butter until the mixture is lumpy and crumbly. Evenly sprinkle this cinnamon topping over the surface of the batter in the cake pan.
- Bake the Cake: Place the pan in the preheated oven and bake for 30 to 35 minutes. The cake is done when a skewer inserted into the center comes out clean. Remove from oven and place on a wire rack to cool completely.
- Make and Apply Glaze: Combine the sifted icing sugar with 1 to 2 tablespoons of milk until you get a smooth, drizzle-able glaze. Drizzle this glaze over the cooled cake for added sweetness and a glossy finish.
