Ingredients
Scale
Cheddar Bay Biscuits
- 1 (11.36-oz) package Red Lobster Cheddar Bay Biscuit mix
- ¾ cup cold water
- ½ cup shredded cheddar cheese
- ¼ cup melted butter
Stuffing Base
- 1 (10-inch) skillet of cornbread, crumbled
- 1 sleeve saltine crackers, crumbled
- 5 large eggs, slightly beaten
- 3 stalks celery, chopped
- 1 medium onion, chopped
- 1 tsp dried sage
- 2 tsp poultry seasoning
- Salt and pepper, to taste
- 5 (14.5-oz) cans chicken broth
- Butter mixture from biscuit preparation (melted butter and seasoning packet)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 425ºF (218ºC). Line a cookie sheet with parchment paper to prepare for baking the biscuits.
- Make Cheddar Bay Biscuits: In a bowl, mix together the biscuit mix, cold water, and shredded cheddar cheese until combined. Using a large cookie scoop, portion the biscuit dough onto the prepared baking sheet. Bake for 14-16 minutes until golden brown.
- Brush Biscuits with Butter Mixture: While the biscuits bake, combine the melted butter with the seasoning packet from the biscuit mix. After baking, brush this butter mixture generously over the hot biscuits. Allow the biscuits to cool.
- Prepare Baking Dishes: Increase the oven temperature to 450ºF (232ºC). Lightly spray two 9×13-inch baking dishes with cooking spray to prevent sticking.
- Mix Stuffing Ingredients: In a large bowl, crumble the cooled biscuits, cornbread, and saltine crackers. Add the beaten eggs, chopped celery, chopped onion, dried sage, poultry seasoning, salt, and pepper. Pour in the chicken broth and stir well. The mixture will be very wet; this ensures moist stuffing.
- Transfer to Baking Dishes: Evenly distribute the stuffing mixture into the prepared baking dishes, spreading it out evenly.
- Bake the Stuffing: Place the baking dishes in the oven and bake for 40 to 45 minutes, or until the top is golden and the stuffing is cooked through.
Notes
- Ensure the chicken broth is fully incorporated to keep the stuffing moist.
- For extra flavor, you can sauté the celery and onion before adding them to the stuffing mixture.
- Leftover stuffing can be refrigerated and reheated in the oven at 350ºF until warmed through.
- Adjust seasoning with salt and pepper to taste prior to baking.
- This stuffing pairs well with roasted turkey or chicken for holiday dinners.
