These Banana French Toast Roll Ups are a delicious twist on classic French toast, featuring soft sandwich bread rolled around a sweet sautéed banana filling, then pan-fried to golden perfection and dusted with cinnamon sugar or powdered sugar.   • 3 Bananas, thinly sliced
  • 1 tbsp Sugar
  • 1-1.5 tbsp Butter

Egg Wash

  • 2 Eggs
  • 3 tbsp Milk

Bread

  • 10 slices sandwich bread, crusts removed

Cinnamon Sugar Coating

  • 1/3 cup Sugar
  • 1/2 – 1 tsp Cinnamon

For Cooking and Garnish

  • 3-4 tbsp Butter (for frying)
  • Powdered sugar (for dusting, optional)


Instructions

  1. Prepare Banana Filling: Heat a non-stick pan over medium heat and melt about 1 to 1 1/2 tablespoons of butter. Add the thinly sliced bananas and 1 tablespoon of sugar. Sauté until the bananas turn golden and caramelized, then remove from heat.
  2. Mix Sugars and Eggs: In a small bowl, combine the remaining sugar with cinnamon and set aside. In another bowl, beat the eggs with the milk thoroughly and set aside.
  3. Prepare Bread for Rolling: Remove the crusts from the bread slices and use a rolling pin to flatten each slice evenly. Spread about 1 to 2 teaspoons of the sautéed banana mixture along one edge of each slice. Then brush the opposite edge with the egg wash mixture.
  4. Roll the Bread: Carefully roll up each slice tightly around the banana filling, sealing the edges to form a roll. Repeat this process for all bread slices.
  5. Coat and Cook Rolls: Melt approximately 1 tablespoon of butter in the pan over medium heat. Coat each roll in the remaining egg wash and place them seam side down in the pan, cooking 3 to 4 rolls at a time to avoid overcrowding.
  6. Brown All Sides: Cook until the bottom is browned, then turn each roll about a quarter turn to cook all sides evenly until they are golden brown and cooked through.
  7. Repeat and Serve: Wipe the pan clean with a paper towel as needed and continue cooking the remaining rolls. After all are cooked, roll them in the cinnamon sugar mixture or dust with powdered sugar. Serve warm for best flavor.
