Description

These Apricot Coconut Pecan Bars are a deliciously chewy and naturally sweet treat made with dried apricots, shredded coconut, and crunchy pecans. Sweetened with honey or maple syrup and bound together with coconut oil, these bars are perfect for a healthy snack or a quick energy boost.

Ingredients

Scale

Dry Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup shredded coconut, unsweetened
  • 1/2 cup pecans, chopped

Wet Ingredients

  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper to facilitate easy removal of the bars.
  2. Combine Dry Ingredients: In a medium-sized bowl, mix the chopped dried apricots, shredded coconut, and chopped pecans thoroughly.
  3. Prepare Wet Mixture: Melt the coconut oil in a small saucepan over low heat. Once fully melted, remove from heat and stir in honey or maple syrup, vanilla extract, and salt until well combined.
  4. Mix Wet and Dry Ingredients: Pour the wet mixture over the dry ingredients and stir carefully to ensure every component is evenly coated.
  5. Press Mixture Into Pan: Transfer the combined mixture into the prepared baking pan, pressing down firmly with a spatula or hands to form an even and compact layer.
  6. Bake Bars: Place the pan in the oven and bake for 20-25 minutes or until the edges turn a golden brown color.
  7. Cool and Cut: Remove the pan from the oven and let the bars cool completely in the pan before slicing into squares to serve.

Notes

  • Use parchment paper to prevent sticking and ease removal from the pan.
  • Feel free to substitute pecans with walnuts or almonds for variation.
  • Adjust sweetness by using either honey or maple syrup according to preference.
  • Store bars in an airtight container at room temperature for up to 5 days.
  • These bars can also be frozen for up to 2 months.
